I'm going to apologize in advance for what is probably a pretty dumb/simple question. I ran a Gentoo system about 20 years ago (wow, I feel old) and I've been yearning for a Linux environment again. Here's my big question: would it be feasible to build a Linux box to use as my main computer but to access it through VNC with a Windows laptop when I want to bring my Linux environment with me? I've used Citrix extensively and the VDI experience is very smooth but I haven't used VNC before.
I prefer the Linux UX but it would be nice to have a Windows laptop "wrapper" to be able to access Word and Excel but to otherwise make my user activity opaque to Microsoft through VNC. I guess on principle/ideologically I have a lot of issues with my data being stored in OneDrive and used to train transformer models and I don't trust "don't worry, you checked the opt-out box, we would never train copilot on your code."
