For arguments sake let's assume you have access to all 4 star characters constellations as well as 5 star standard characters (C0 for arguments sake). To spicy this up a bit more, let's also assume that you can have access to constellations as well as 5 star weapons but every constellations/5 star weapon counts to your limit. For example, you can choose to have C1 Hutao which would count as 2 five stars or do C2R1 Raiden which would count as 4 five stars. You can also do 5 C0 five star characters which is the route I'm going to take.

Here are my choices in no particular order from a combination of meta/abyss/overworld experience perspective:

Yelan

The newest addition to Genshin Impact and she does not disappoint. The sprint on her E makes her one of the best characters for overworld exploration as well as quests. She's also an extremely strong character who is a part of one of the stronger teams when paired with Xingqiu. Since she's not reliant on Benett at all, this leaves us with a potential Xiangling/Bennett team for the abyss.

Kazuha

The choice here is between Kazuha/Venti for a 5 star anemo character, they both offer good experience in the open world (high jump/lift with their E as well as stamina passive) but I feel like Kazuha is just a little bit more practical in terms of the abyss/meta. Venti is a bit more one dimensional in the sense that he only offers CC (although it's arguably the best in the game), while Kazuha is more well rounded since he can do a little bit of everything. In this scenario where we have a limited number of five star characters to choose from I put more value into being good at everything instead of being great at one thing.

Ganyu

I think this might surprise a lot of people since Ganyu has been in the game since 1.3, but IMO she's one of the best characters to use in the overworld due to her ability to snipe everything from a mile away. This really comes in handy in a number of daily quests as well as quests/material farming in general. From a meta perspective, Ganyu fits with Bennett/Xiangling for melt, as well as Kazuha/Mona/Diona for Freeze giving me a number of options.

Zhongli

Although MHY has put more emphasis on healers instead of shielders in the past couple of patches Zhongli is still the ultimate comfort character IMO. Playing the game with Zhongli vs without is a day and night difference IMO, it just feels so nice to not have to worry about 90% of the attacks in the game. While he might not be the BIS option outside of a Ganyu melt team, he CAN be a decent option for most teams which has value in itself IMO.

Kokomi

I struggled really hard with this last slot but ultimately decided to pick Kokomi due to the utility that she brings to the team. I figured I couldn't go wrong with arguably the best healer in the game as well as one of the most versatile units in the game. Kokomi could be the driver of a mono hydro team or a Sukokomon team, and can also be utilized in different freeze variations. Again flexibility is what I'm looking for with my five characters, and Kokomi definitely brings that to the table.

Honorable Mention:

Raiden Shogun

I debated really hard for Raiden, but ultimately decided to leave her off of my team since Ganyu is already being paired with Xiangling/Bennett. While Raiden National would've been a great option, I valued Ganyu's overworld capabilities just a tad more than what Raiden brought onto the table.

As you could probably tell, I put a ton of value into overworld experience since I found myself spending more time in the overworld as opposed to the abyss/domains. I'm curious, who would you guys pick if you were only allowed 5 five star characters on your account? Obviously no wrong answers here :p
