Hey guys, still on my recovery journey, but doing better after my pretty bad flare a few weeks ago. I discovered this Korean savory rice porridge and I would like to share it with you guys, and find out if anyone else has tried it. It's made with short grain rice, chicken pieces, chicken broth, and light vegetables, I just use carrots and broccoli. I use low sodium broth but you can also just make your own if you'd like, and very little salt on the veggies and chicken. Sauté the veggies in a little olive oil in a pressure cooker till they're more tender, add the rice, saute for a few more minutes and then add in the stock and chicken pieces, then cover your cooker and let simmer on low heat. After a few minutes you remove the chicken, spread it and add it back to the mix and continue to simmer until the rice is fully cooked and that's it ! It's a pretty simple meal and it isn't too harsh on the tummy, and with the added veggies and protein it is a good meal to get our nutrients in.
