Winter cover for new bed?

I've laid down cardboard and 3,500 litres of topsoil and compost to make this large flower bed. Other than the trees and a tree peony I'm not planning to plant it out until the spring. Would anyone recommend a cover crop that will grow over the winter or something else? I can just leave it bare but am thinking about animals digging about in it and weed seeds. Maybe pointless to worry about that given how long it'll take seeds to germinate. What would you do?
