Advice on creating interesting and fun dungeon layouts?

I am an aspiring game developer, and I want to start off by building games in RPG Maker.
For my first game, I want to make something akin to a dungeon crawler where you collect things like items and keys to progress, very similar to the Legend of Zelda.

I am just not sure how I can build fun and interesting dungeon layouts. I want players to look at areas they can go to and be like "Man, I want to go there but I don't have the right item", then when they get it, I want them to feel excited that they can now go back and explore those areas. Although I don't want it to feel like useless backtracking, or that it feels forced.

I'm not asking for specific dungeon layouts. I'm just asking for advice on creating my own dungeon layouts. If it helps, there are additional concepts I'd like to experiment with, such as:

  • Multiple entrances to the same dungeon (looking at the same room from multiple angles maybe?)
  • Dungeons that physically shift and change depending on your actions, perhaps being used for puzzles too
  • Areas leading up to dungeons being their own dungeons, and maybe also being woven into the dungeon (like maybe you catch a glimpse of the dungeon interior while making your way to the proper entrance?)
  • Maybe puzzles that use temporary items to tease items you'll get later (like bomb flowers in Ocarina of Time)
