GPS for use in maps

Hello! I'm trying to use my Ultra watch's GPS and trying if I can make use of it together with maps. I'm planning to have an off road adventure and there would be times that I will have no cell reception. I tried turning off my mobile data to check if it would work but it seems that it is not updating my location in google maps after I do so while moving. Am I missing something out?
