Advice on rooting my Galaxy S7

Hi! I have been using my S7 (Exynos version) for over 2 years now, and since that Samsung will not support the model with Android 9 Pie (with One UI) anymore, I've been thinking of rooting it, install a custom ROM, and get the latest and greatest updates. Is the risk to root good, since that it's already out of warranty? And to users who has custom ROM's installed, which custom ROM is the best for it, and should I just follow what/how it's done on the xda developers site?
