These guys could easily be a meal unto themselves if you go overboard... which you very well might. Breaded chicken cutlets, pan fried until crispy, topped with a tomato and red pepper sauce and mozzarella pearls before being broiled until the mozzarella is all bubbly and stringy. Finish it off with a chiffonade of basil and sandwich it all inside a miniature brioche bun, you'll scarf these down in just a couple bites!
