Salmon Gravadlax

Let me just start off by apologizing for my absence last week; school just started for me, so I completely forgot about Thirsty Thursday. I was actually going to recognize the start of the school year with a brain food bar bite, and it turns out I desperately needed it.

Anyway! Gravadlax is a dish of cured salmon; it's traditionally cured in only salt, sugar and dill, but I've thrown in some crushed black peppercorns, coriander seeds and fennel seeds, as well as a fresh hit from some lemon zest and a liiitle Norwegian aquavit! You can either enjoy it on its own, or on a slice of rye bread with a dill mustard vinaigrette and pickled red onion slices.~
