Greek vegetable and feta cucumber rolls

Last week, we were in Sweden; this week, we've traveled 1500 miles (2400 kilometers to our non-American patrons) south to Greece!

Strips of fresh cucumber are wrapped around a filling of Greek yoghurt, feta cheese crumbles, chopped sun-dried tomatoes, roasted red peppers, and kalamata olives, and seasoned with lemon zest and oregano before being skewered onto a cocktail stick. This is an appetizer you don't have to feel guilty about when you have three or four! ...or 17.
