Bamba’s Bite of the Week

For everyone who was asking, "Where's the beef?" for the past couple of weeks, here's the beef! In fact, I've got three styles of flaky, handheld turnovers for you this week, one that will satisfy your inner carnivore, your inner hippie, and your sweet tooth!

• Empanadas de carnívora: a savory mix of seared and juicyyy sirloin tips, red and green bell peppers, red onion, chopped boiled eggs and green olives that's spiced with cumin, oregano, paprika, and cayenne pepper.

• Empanadas de vegetariana: another savory combo of sauteed mushroom, corn, tomato, poblano pepper, spinach, and Colby Jack cheese, spiced with diced jalapeño, cumin, cilantro, oregano, and a pinch of nutmeg.

• Empanada de postre: gooey chunks of dark and white chocolate swirling around sliced strawberries, blueberries, raspberries, flaked almonds, and a sprinkle of sea salt.
