Do PPIs become less effective over time?

I've been diagnosed with GERD since I was roughly 17 and for the past ten years (I'm 28) I have had fluctuating periods of severity with my acid reflux.

I would usually take omeprazole 20mg when symptoms got bad, and a month later would come off it again to find my symptoms much more manageable. In the past year however, I've found my symptoms being present while taking the omeprazole which has never happened before (unless due to an overindulgence on acidic foods) and it's been tricky to come off PPIs because the symptoms are worse.

I've not tried to play with my diet much because I don't drink much alcohol, I don't smoke and I already cut out trigger foods such as tomatoes and carbonated drinks. I do have a sweet tooth tho which may be my Achilles heel.
