Having trouble in career mode

It seems like every time I do career mode and choose the "I'd like a challenge" option, it's absolutely impossible for my career to go anywhere. Does anyone have any tips or tricks for me? I love this game and I'd like to stop playing on easy because I want the challenge, but when I can't build up the shitty team I start with it's super frustrating. I'm on iOS if that helps at all.
