Best fish to eat

I love fishing, but i don't normally eat fish. So i always catch and release. I do eat at sushi places and my favorite is Salmon Sashimi. I'm also considering trying some fish but i don't normally like the taste of cooked fish.
So with that in mind what do you think would be the best fish i should aim for or what other fish would taste like salmon?
Also does anyone else do allot of fishing but don't eat fish, would local restaurants buy your catch off you?
