Need advice to catch a fish at a lake that isn't constantly stocked?

I need to know I have 8lb braid. I keep getting plastics that have too much weight. Could someone offer advice on what plastics I should use, the hook size, weightless of weighted rig, including the size of weight. I'm really tryna catch something that's not a panfish.
