Do big game fishers really spend large chunks of time fighting/reeling a singular fish in?

Reading an online article about a son and pop duo where they caught a really massive tuna saying it took about two hours to reel in. And in the show River Monsters, it portrays the host struggling a massive ray saying it also took at least a couple hours to reel that thing in. My question in are there actually fish out there u can catch that u may have to literally battle against if u manage to hook one? I wouldn't know. I never worked a fishing rod before lol
