Frequent ping spiking issues since switching to Fios

Hi, I was hoping I could get some assistance with some ping issues I'm having while gaming. Since switching to Fios, I've been having much more frequent ping issues than I previously had with Xfinity, using the same equipment (router, minus modem of course).

My ping frequently will jump from 10-20ms to 180-200ms out of nowhere, then eventually back down to 10-20ms, and repeat. I previously did not have issues with on my prior provider with the same equipment. This happens frequently during gaming for seemingly no reason and across multiple games (Fortnite, Valorant, etc). I've also observed it when sending ping requests from cmd prompt to Google's site.

I have attempted changing my 5gHz band to different signal channels. I have enabled Upstream QOS on my router. I have set my gaming devices as highest priority in the QoS rules. I have rebooted the ONT device. None of these tweaks seem to fix these ping spikes. I am located on the Northeast US, and these issues seem to most frequently happen between 7pm-12am EST. Please let me know if you have any advice or recommendations on what I might be missing
