Should I Quit My Full Time Job Now or Later

I want to know if it's smart to quit now or smarter to quit later.

I've been at my current job for just over two years working as an SDR at a tech company. I do not make commission which is kinda strange for a sales job. I make only $52k/yr there now not great benefits. I work at a big name company. My resume and with the fortune 500 company name gets me head hunted 3-6x per week every week from LinkedIn and Indeed. The jobs that are approaching me are offering upwards of $65k base plus commission and much more generous benefits.

I'm currently a full time university student working towards a bachelors in computer science. I also drive part time for the food delivery apps. I can easily make more than $1,000 on the weekends driving for the food apps. I also mine cryptocurrency to the tune of $800/mo.

I am wondering if I should take the summer off from sales and focus my weekdays on school work, food delivery, and maybe a little food delivery travel (I've always wanted to DoorDash across the country). Then go back to full time desk work in a higher ranking and paying position account executive at a higher pay in the fall.

At the moment I am have about 20k saved and won't need to touch it if I just switch to food delivery full time. I also estimated that I would spend thousands less in taxes per year if I just stuck with delivery food full time due to the self employment taxes.

The job I'm doing has recently changed and I'm currently doing something that ethically doesn't sit well with me. I'm not happy at work any longer.

Can I quit now or is it okay to take the summer off from a desk job? Or should I just stick with food delivery for the next two years until graduation which would give me more free time to study and better tax breaks? If I put more time into my school work I can graduated early and school will cost less.

I can see making about 60-80k driving food or 100k/year doing SDR work. that I'm not super fond of. After graduation with a CS degree I'll be able to make at least 100k as a sales engineer or doing more tech stuff for 100k .

Should I stay, deliver food, go get another sales job in the fall? Any advice would be appreciated here. My long term goal is to retire in about 15 years or less.
