What's your holiday order cutoff?

This is our first holiday season with a shop, so we're planning to cut orders off for Christmas shipping using the USPS recommended dates. How do you all handle closing off listings to avoid people stressing about shipping?
I'm torn between vacation mode and extending our processing time to 2 weeks. We typically ship orders next day, but keep a timeframe of 1-3 business days. Any major pro/cons we should consider?
