Probably dumb question, but why is everything done at the left side?

The amount of times I’ve been told I undid the girth or mounted from the wrong side is crazy, is it superstition? I can’t imagine always mounting/putting weight on one side is the best. Would it not stretch the stirrup leathers or cause back pain? I always find the left stirrup is longer unless it’s a new leather.
