Is there anyone else who feels they are doing really simple projects but are too lazy/underconfident to take up really challenging projects? How to break out of this habit?

Hi, so I feel like I have this problem where I always end up selecting really simple projects to do because I feel scared I won't be able to make much progress with a tough/sophisticated project. I lack confidence to step out of my comfort zone and do something with a steep learning curve and have ended up doing a bunch of really similar stuff over the past 3 years. I am a junior now but the project I am doing right now is not much of a step up from stuff I did last year as well. Does anyone else have this problem? How to break free of this? I just can't shake off the feeling of "what if I am not able to complete even 10% of this, might as well do something I am 80% sure of and know already".
