Leveling is driving me crazy

I don't know what I did to fuck it up but I'm starting to get to the end of a very short rope.

Yesterday I spent a good hour or so leveling to get my z offset to 0 (from -1.300) saved it, and everything seemed fine. Today I go to start a print and somehow during that leveling I must have completely fucked it.

The edges of the bed seem fine, the wipe when it starts printing doesn't look like it's getting crushed or not like the nozzle is far enough away for nothing to stick, but when it gets to the center, nothing sticks. During the printing, just to see if it would work, I kept lowering the z offset until I hit -1.500 and just gave up. My bed is flat, at least to the naked eye and using another object that I know has a reasonably flat, straight edge, I couldn't see any gaps.

Please help, I'm getting very frustrated and don't want to end up losing interest in trying to fix it because of something I did myself to fuck it up.
