Please explain the economics of power systems: specifically why load factor should be high?

Okay so, I don't get why load factor should be high. I don't get what's the problem if the average loads and peak loads are not the same. My perspective is, what's the problem if overall average load is low? Isn't lower load= Lower consumption= more economical? And what's the problem if peak load is way higher once in a while. I still think overall consumption would be lower than say, having a very high peak and a very high average load. I absolutely don't understand the economics of power system and every source just gives a one line definition. Any help is greatly appreciated.
