Bleed vs straight up damage (faith build)

Currently on my third run through but first run through for SOTE. Decided to risk it all and focus on a faith build.

Iā€™m at the capitol so far and Iā€™ve been using the Uchigatana with sacred buff on it. I like the bleed on it with a good moveset and leveling up to 20 is still keeping me going strong. But! Last night I went into the underground and even with the sacred buff, I was still having to two hit some rats. Not to mention those big troll dudes were eating me up. I know I have some strong bosses coming up too.

Using the ā€œElden Ring weapon calculatorā€ it says that the Iron Greatsword from the base game will give me almost 800 attack power at 25, compared to the Uchigatana at 548.

I like the bleed aspect of weapons, obviously helps a lot in battle when you get that critical strike. How much would I be losing going to a weapon without bleed? And would yā€™all recommend anything that can carry me through the beginning of SOTE?
