Does blending foods effect nutrients that much? I like to blend sweet potatoes/beans and add them to waffle mix

I have been trying to eat healthier but its challenging because I dont like a lot of things so I end up eating the same meals a lot. Oatmeal, peanut butter sandwhich, protein shake, ramen with veggies, tofu, bagel with avocado. Thats most of it

I dont really like sweet potatoes or beans but sweet potatoes I will sometimes blend up with soy milk and add to waffles or add to oatmeal. I eat a lot of oatmeal with either that or canned pumpkin and ground flax seeds

I was thinking of doing the same with beans but haven't tried that yet. I dont really like rice or pasta or beans but I love vegetables. I like refried beans but they are more expensive to buy the kind that doesn't have a butt load of sodium. I'm pretty broke right now

Anyway is it alright to just blend foods or will the destroy too many nutrients?
