I make this meal, more of a side dish at our house, that I call cold bean salad. My lovely late mother used to make it all the time.
It consists of:
Boiled peeled potatoes (I use yellow potatoes usually) about 6-8
Boiled or steamed green beans (however many you woulx you)
Red bell peppers, my mom used to use the kind that come in a jar soaked in vinegar but i prefer to cook my own.
Diced Garlic Cloves (raw)
Once you've cooked all the raw ingredients, cut up the beans and peppers into smaller pieces, mix it all together in a bowl with the raw garlic (you can cut the potatoes before you put it in there but not too small cause theyll break apart even more as you mix it all up). Add olive oil and red wine vinegar or balsamic, i use balsamic reduction cause i freaking love it, maybe toss some salt and pepper in there and let it sit in the fridge for a bit and boom, youre golden.
Fairly cheap, a big bowl lasts you a few days, and its super healthy! Let me know if you try it or do something similar already!
