How can I eat low carb while in India?

I used to be prediabetic and completely changed my lifestyle so as not to end up with diabetes. I try to keep my diet low (but not super-low) carb and protein and fiber heavy. I limit my carbs to 45g or fewer per meal (I try to spend these on something of nutritional value, like fruit, squash, or while grains). Other than that, I have no specific dietary needs. I am a very adventurous eater in terms of the flavors and proteins I am open to.

My husband and I will be in India next month for several weeks and I am extremely excited, but concerned about being able to maintain my eating habits. I'll not be able to eat any raw veggies or fruits (risk of contamination). What are my best options, other than extreme portion control? I'd like to avoid the "just eat less" solution since we will be doing a lot of physical activity.
