Hey everybody! I'm a poor college student, and as such I can't afford to spend much on veggies nor do I always have the time to prepare them. As it is right now, I buy an onion and a green pepper at the beginning of every week, chop them up and combine them in a ziploc bag that stays in my fridge. I usually just add a handful to whatever I'm cooking (mostly chicken and eggs).
My question is am I covering my bases? I know it's not the recommended amount of veggies, but are they most practical? Or would my money be better spent on other veggies? Also, I also eat a small apple a day if that helps.
