I just bought a cast iron casserole dish. This might seem stupid but I've never had one before and I'm excited.
What's your favourite recipes to make that are suitable for batch cooking for 1 person?

The first thing I would recommend is to look up proper cast iron skillet care.
I have a few. I like doing my cornbread/quiche/baking in one and predominantly meat based meals in another.
Dutch oven recipes are great if you have a good heavy lid. Just search "simple Dutch oven recipes" and you will find legion.
We have an old one that is pretty much just for bacon or sausage too.
They are great any time you need a thick bottomed pan with a high thermal capacity.

Corn starch is very different from corn flour.
Corn flour is milled corn kernels whereas corn starch is a concentrated starch that has been extracted.
I live in the "South" in the US and I grew up making cornbread/muffins.
