Has anyone stuck a data logger in their purpose built high end dry aging fridges?

I've been working on modding a fridge for dry aging. I'm wondering what kind of temp and humidity consistency users of purpose built dry aging fridges are getting.
My temp is pretty rock solid, but I'm seeing my humidity fluctuating between 82% to 87%. I'm curious to see how my work is comparing to a high end fridge's consistency.
