So I installed blink security cameras to keep an eye on things and to alert me when my son comes out the door or plays outside in front yard or back yard, SHE TOOK TWO OF THEM DOWN! Should I bee petty and shut off her cellphone since I pay the bill? I'm thinking sh3 didn't want me to see someone coming over.

If you are living there then you have every right to put up cameras for “security” purposes.

We need more context. If it’s your home and you are both living there then do your thing. If you’re living separately then she has every right to take them down. Either way I wouldn’t shut the cell off if she’s with your kid and there’s an emergency. I would suggest getting her on her own plan. Most providers will work with you on that.
