Can you just go .. With little planning?

Family of 4 going middle of October.. We're staying two weeks in Kissimmee, so offsite in a decent villa, we'll have a car etc etc.. We're coming from Europe, obviously we are coming to see the attractions but not everyday. We want to see real life places too :)

Do we totally need to plan every detail before we go, down to the order of the the rides, attractions and lunch bookings? I mean I don't really know what I will want to eat in six weeks time?

Can you just decide on the day, hey lets go to Epcot.. Is all the planning just to save a few bucks?
