Do some crops involve less animal deaths than others and if so do vegans seek to eat plants that cause less animal suffering?

I am aware that monoculture crops and their farming practice leads to the deaths of huge amount of insects, reptiles and rodents, through pesticide use and mechanical farming methods.
Yet this seems to be largely ignored by the vegan community.
Is there a desire to eat food which does not have such animal death involved?
Shouldn't vegans also boycott processed food?
