Stop bath. Do we need it?

I've always been taught that stop bath is apart of the process and is necessary because it stops the film from developing. Everything that I've read on developing b&w included the use of stop bath as well. Though since being questioned why I even use it by another photographer I've cut stop bath out of the process and instead rinse my film with water.

I know its only cutting a minute out of the process, but I'm curious to know what people think of this. Also want to know if not using stop bath could ruin the longevity of my negatives.
