Curious about stability mechanics, combat damage...

Haven’t given this stat much thought until recently, still not too sure how it works. Those torturer guys with the titanite catchpole(wish they would drop this weapon but oh well), seem to drain my stamina all the way when I fist encounter them causing my character to make the groaning sound and the flailing open arms animation. This doesn’t seem to happen at other times when my stamina is drained. Why does this happen? Does higher stamina/endurance affect how the stability attribute of a shield matters or does the stability attribute remain constant, independent of stamina/endurance? Not sure if I’m asking correctly... Regarding damage, if I hit an enemy with the tip of let’s say a sword vs. the shaft of a sword, how would this affect damage given? Does the same thing apply when I am hit? I would assume so. Depending if I am hit in the leg or torso, would certain pieces of armor affect the amount of damage received or does all defense just equal a total that is used in damage calculations? Any help would be appreciated.
