Changing Foods with a Fussy Eater

I never thought I'd see the day that I talk about my sausage boy being a fussy eater however.... we've recently found out he gets a skin irritation from chicken so have changed to a high-quality salmon-based kibble which he smashed down the first few times we gave to him after gradually upping the volume of the new food until he was happily eaten just the salmon kibble on it's own.

For the next few days, he wasn't too keen on it, so I started mixing some steak juices, salmon etc into his food to get him interested again and he would happily smash this down then too.

Now he won't even touch his new kibble if we don't add any extras to it, and hours after breakfast he will still have kibble leftover as he might come back and just eat one or two bits sporadically but before this, we've had to give him tools to slow down his eating so it's very out of character.
I realise I shouldn't have pimped up the new feed with steak juices and the likes as I have a feeling that he's just waiting for his food to be given the 'chef's touch' but that's not sustainable and I want to see him eating his usual kibble. He gets lots of treats and veggies during the day too so it's important that he consistently eats this base meal.

I don't want to end up in a standoff with the most stubborn creature on earth otherwise the little man is going to get hungry and I hate the thought of him not eating properly but then I also think that if he was truly hungry then he would just eat what he has.
Has anyone had any similar experiences or advice that they can share?
