How do you guys plot out your homebrews?

I'm planning on creating my own completely origins campaign, world and all. I've dm'd for over 3 years but have only done pre-written campaigns. Tbh I'm a little overwhelmed with creating everything. How do you guys usually get started? How much of your world do you flesh out before hand? I want this to be a long lasting campaign so I want the world to be pretty well fleshed out
