Variant Encumbrance rules for HexCrawl?

I'm building a West Marches, HexCrawl campaign where, for a while, the PCs are travelling on foot.
My main worries are tracking rations, water, and ammunition (arrows, etc.). Ammunition is especially weird in 5e, since it weighs basically nothing and 5e doesn't have a volume or "slotting" mechanic.
Can anyone recommend a medium-crunchy level equipment system to track and limit these more important resources?
