Need help balancing a short adventure idea

Hey everyone, I’m here looking for the help of the Hive Mind!

Me and a few friends are currently playing a campaign and it’s been going for a few years now. Lately though one of the players has started to leave early leaving us each time with an hour/hour and a half to “waste”.

So my idea was to dm a short adventure myself to play randomly after our regular session. The thing is I wanted to give each character a “pet” which they can use to fight too. So it will level up and so on. It will have basic attacks, nothing fancy, pretty much like a Pokémon lol how do you think I should balance the adventure?

Let’s say 3 lvl 1 players each with their own beasts, how can I balance it? I’m mostly worried about action economy, cause the players will end up having 6 turns each round.
