Drywall over d log interior

Wife is tired of spiders and bugs coming through log house bedroom. Looking at online log home blogs they suggest furring out wall with furring strips then add foam insulation board in between bays. Tack drywall over furring strips and get to taping and mudding. Any suggestions contrary?

Windows will be tricky as I will have a 5/8 in dry wall strip to deal with trying to cover up. Maybe a trim piece could work. Any suggestions?

Ceiling is drywall but corners where molded with wood trim. My guess is I will need to feather mud onto existing ceiling drywall. Any suggestions greatly appreciated.
