Switch that cuts power to pump when water is above a certain level?

I use a pump to get water from my sink into a small dishwasher. To me this is easier and safer and more renter friendly than installing and uninstalling it from the water line properly.

The dishwasher has an alert when its full but there is no way to get that feedback back to the pump and cut water.

When it is full basically it starts to overflow slowly.

Ideally what I want to make is something that shuts off the power supply for the pump when water is detected outside of the dishwasher.

I have seen these high low sump pump switches and while those could work the issues are that I would have to convince the low indicator that its always submerged and they are $60 which seems like too much.

Ideally I just sort of need a water detector connected to an AC switch.

Now I do know how to soldier, insulate, kabo join, etc electrical equipment but I am unsure of the exact circuit I need. The included power supply allows you to modulate voltage too which makes me unsure about the components I can involve here.

Ideally I would find a way to just get the water detector component and figure out what component I can use to attach it to and essentially have it cut power until reset. I am also happy to find something that cuts power at the outlet level.

I do see some that can switch on and off a 12V circuit but am confused where I would put that in here given my AC outlet isnt 12V and I run the pump at 8V.

Edit for now the plan is based on the options yall found. A Arduino Nano IOT (could've gone cheaper but I wanted to have wifi because idk could be useful), a relay module, and a 2-5V water detector. Time to learn some electronics 🤓
