Thoughts of skim coat as a finish?

Hello! I want a somewhat concrete finish to my project and I think most people just go limewash for this and ive looked into it heavily. The downsides are stains. Im only interested in the white-grayish tones.

Next are stucco and paint-concrete finishes which also work but Ive found look usually darker, feels less nice. Pros is that it wouldn't stain, but will crack over time (as well as I think it not looking particulary as nice and smooth)

Now the one thing I saw (in person) but nobody talks about that Ive seen is this skim coat. It felt really nice smooth and buttery, and looks like a really well applied limewash. I was told it doesnt stain. Are there any cons with my final finish just being thing? It looks and feels great so Im not sure what Im missing.

This is to replace the paint of an already painted project. Thank you!
