In need of suggestions

So, the wife wants to go with flat walls in this bathroom remodel. Do I scrape and sand and do thin coat to smooth or tear it out and redo drywall from scratch?
Planning on keeping tub but adding new lights, vanity, toilet, new flooring. Plan is to tile floors and around show/tub area.
Also any ideas on taking out the wall between the tub and toilet? We'd like to keep the tub and shower curtain layout.
