How to add more meaningful choice & interaction to some of the random encounters?

Grave: This encounter seems like they just come across a grave. They're given some general information about the state of the grave, but that's it. There's nothing meaningful here.

Hidden Bundle: I could see this become meaningful if it was given valuable goods (money, weapons, tools), or perhaps have a trap in them. Otherwise, it also seems like extra fluff like the grave.

Skeletal Rider: This is a eerie encounter, but there's no real choices to be had here. You attack it and have a fight, or don't, and then... what? Perhaps you could follow it somewhere interesting, but I'd like to think there could be more done here.

Corpse: This seems like it could offer some information about the world, but like the grave and bundle, is just a thing that the characters observe, and move on with.
