Hi Im a big fan of chicken korma and butter chicken🥹 and Ive been trying to replicate those recepies at home using verious yt tutorials. Unfortunetly despite meny attempts at different recepies I cannot replicate the nutty sweet taste of chicken korma that i could only get from odering it of my local restaurant that unfortunetly is very pricey. Does anyone have any suggestions on how to obtain that (nutty) sweet taste? So far I tried regular boiled cashews, roasted cashews adding hazelnuts, adding coconut powder carmelising the onions and adding cinamon. Thanks in advance! and sorry for my bad english hope i got the massage across🙏

Recently, I've been experimenting with a base gravy as well as a masal sauce.

I've found that in order to get depths of flavour, you have to think of it in terms of a building process.

BIR (British Indian restaurants) use a base gravy. But don't be fooled by the people who tell you that you have to blend carrots, cabbage, and a dozen different vegetables together. You don't.

A base gravy is pretty much a subtlety spices onion and tomato soup.

Restaurants do not add dozens of vegetables in their base gravy as it would cost them a fortune.
