The problem is that we've come to see environmentalism through a religious lens. Climate change is seen as divine retribution and dietary changes as a way to atone. As such only the most spartan and unpleasant ways will do.
Until we move towards the idea of ecological action being a rational courtesy towards ourselves rather than a urbanite self flagellation the message won't ever be attractive.
This applies to everything. You have to talk about what you can give people not what you intend to shame or tax away.
