Any advice to know if you're gonna win a war ?

Hello guys

So sometimes I have trouble with war. Looks like I'm gonna win and then, I'm not. I got 50h on the game and I've learned the basics, like look at the allies before doing anything stupid and things like that. Yesterday I started a war with 6k men, against 5k. I've lost every battle despite the difference. Afterwards I noticed that my ennemy got 22 knight, while I got 10. I guess that's the reason ? Is there anything else like that to look after ?

I'm a bit confused about men-at-arms too. I've read the guide on this sub about them but it's kind of short. I tried to do things like only archers but it doesn't seem to do much difference. Also, they're supposed to become crossbowmen at High medieval time but they're not.
