Best start for a noob? (CK3)

My PS5 copy arrived today and I can play! Just finished the tutorial and am wondering what the best start would be. I'm struggling to be able to declare war and stuff, even though I fabricated a claim.
Edit: Thanks, I managed to figure some stuff out and United Ireland for about 5mins, then my king died of old age and the land was divided up between my first born and some other brothers (who were younger half brothers) So now I need to figure out how to stop that from happening.
