Alaska Fishing and zip lining excursions?

We are planning on taking a cruise in Alaska in June. We're looking into options for excursions. Ports we will be stopping at include Ketchikan, Icy Strait Point, Juneau, Skagway, and Seward. Traveling with a large group (8 people). We have at least one person in our group interested in fishing, and a couple more people are interested in zip lining. We're a bit overwhelmed with all the options, and have a few questions:
- Are there cities that are better for fishing and/or zip lining?
- Why are some of the fishing expeditions over $300 a piece? (I'm assuming it's partially related to boat size and guides that know what they're doing?)
- Are we better off booking fishing through the cruise line, or is this something we can easily find in town?
