Why are higher grade meats not always available?
Post Body

For context I live in Quebec and often go to Costco to find prime or Australian wagyu cuts. Oddly enough in the last year I haven’t found a single cut available.

To be specific they may still have the version in a vacuum seal pack but they used to have the ones cut by the butcher and mixed in with the rest.

Is it a seasonal thing? Was it a promotional thing? I’m just trying to figure out why I can’t find fresh prime or Australian wagyu in store anymore. I’ve tried several stores as well.
